Paella
In second place, I would say gambas al ajillo (shrimp in garlic). It's a tapas dish.
Tortilla is also popular. It's not a mexican tortilla. It is a potato dish, often served room temperature.

Jamon Serrano is the hind leg of the white pig, obtained under proper slaughtering and butchery conditions and subjected to a process of salting/drying and curing under strictly controlled conditions . This has to be some of the best meat I have tasted, although I was once in a hotels in Siem Reap where I was lucky enough to taste some Red Curry Cambogee with beef and this was nearly as good
